First, you need to prepare the dough for Pani Puri. For this, take a large pot and add semolina, flour, and salt. Now, add lukewarm water little by little and knead the dough. After this, cover it with a damp cloth and let it rest for 20–25 minutes. After this, mix the dough thoroughly and roll it into thin rotis. Now, take a small bowl or a small lid and cut out round puris using it.
Now, take a pan, add oil to it and heat it. Once the oil is hot, add the puris one by one and remove them. Roast them until they puff up and don’t remove them. Cool them and store them in an airtight container.
Now it’s time for the potato stuffing. For this, take boiled potatoes and add them to boiled black gram, chopped onion, red chili, cumin powder, chaat masala, salt, and coriander leaves. Mix them thoroughly and prepare a batter.
Now it’s time to make the spicy and tangy water. For this, first add mint, coriander leaves, green chilies, ginger, and a little water to the mixer and grind them finely. Once this is ground, add tamarind pulp, black salt, roasted cumin seeds, chaat masala, lemon juice, and cold water. If you want the water cold, keep it in the refrigerator for 30 minutes.
Serve like this:
Now, take the prepared puris. Cut a small hole in the top and place the potato-chickpea stuffing inside. Add a little sweet chutney if desired. Serve with water.
