All ingredients for making Makhana Kheer

  • 2 cups makhana
  • 1 liter full-cream milk
  • 4-5 tablespoons sugar
  • 1-2 tablespoons ghee
  • 8-10 cashews
  • 8-10 almonds
  • 1 tablespoon raisins
  • 3-4 cardamoms
  • 8-10 saffron strands
  • 1 tablespoon chopped pistachios

Learn how to make Makhana Kheer: First, roast the makhana seeds thoroughly. Now, stir until they become slightly crispy. Once the makhanas are roasted, remove them to a plate and let them cool slightly. Then, grind some of the makhanas coarsely in a mixer. If you prefer, you can keep some whole. This adds a nice texture to the kheer. You can sprinkle this on top for garnishing.

Now comes the second step.

First, pour the milk into a heavy-bottomed pot and heat it over low heat. Once the milk comes to a boil, reduce the heat and let it simmer for a few minutes. Stir the milk occasionally to prevent it from sticking to the bottom of the pot.

Now comes step 3. Add the makhanas (lotus seeds) you ground in a mixer to the milk you just boiled. You can also add whole makhanas (lotus seeds) as well, which is optional. Cook over low heat for about 10-15 minutes. During this time, the lotus seeds will absorb the milk and soften, and the kheer will gradually thicken.

The next step is step 4. Add sugar to the kheer and mix well. You can adjust the amount of sugar to suit your taste. After this, add any chopped dry fruits, such as cashews, almonds, and raisins. And you can also add pistachios in it. Apart from this, if you are using saffron, then soak the saffron threads in some warm milk and add them to the kheer. This will give it colour and also enhance the taste of the kheer.

Now the next step is 5, in this you have to add cardamom powder in the end and cook it on low flame for 3-5 minutes. When the kheer becomes thick as per your liking, then turn off the gas. And after taking it off the gas, garnish it with chopped pistachios and some dry fruits. And you can also add saffron threads.
