Ingredients
For kneading the dough
*2 cups flour
*2 tablespoons yogurt
*1 teaspoon sugar
*½ teaspoon baking powder
*¼ teaspoon baking soda
*½ teaspoon salt
*1 tablespoon oil or ghee
*Lukewarm water as needed
For making the kulcha
*2-3 tablespoons finely chopped coriander leaves
*1-2 finely chopped green chilies
*1 teaspoon nigella seeds or sesame seeds
*A little dry flour
*Butter or ghee
Dough preparation details
First, you need to prepare the dough for the kulcha. For this, take the flour in a large bowl. Add salt, sugar, baking powder, and baking soda and mix well. Add the yogurt and a tablespoon of yogurt, along with a little oil or ghee. Knead the dough thoroughly.
Knead the dough by adding a small amount of water. This will keep the dough soft. Be careful not to make it too stiff. Keep it very soft. The softer the dough, the softer the kulcha will be, and tastier too.
Now knead the dough thoroughly for 5-7 minutes to make it smooth. After this, grease it with a little oil, cover it, and let it rest for at least 1 hour.
After an hour, take it out and start making the kulcha. First, make small balls. Now, take one ball and flatten it slightly. Shape it into a round shape. Sprinkle some coriander leaves, green chilies, and nigella seeds or sesame seeds on it. You can also sprinkle chaat masala on top if you like. Don’t roll it too thin, otherwise the kulcha will not be as soft. Keep it smooth.
Now turn on the gas stove and place the pan on it to bake the kulcha. Apply a little water on one side of the rolled kulcha and place the wet side on the hot pan. Do this on both sides and roast it.
When the kulcha is cooked through, turn the pan back upright and remove it with a spatula. Immediately apply butter or ghee on top. Prepare the remaining kulchas in the same manner. Serve with chole sabzi or any other gravy.
