Ingredients

  • Wheat flour – 2 cups
  • Semolina – 2 tablespoons
  • Salt – to taste
  • Celery seeds – 1/2 teaspoon
  • Oil or ghee – 3 tablespoons
  • Water – as needed
  • Oil for frying

Follow the step-by-step recipe for making papdi:

First, take a large pot and add wheat flour and semolina to it. Then, add salt and celery seeds. Add 3 tablespoons of oil or ghee and mix thoroughly.

Now, add water little by little and knead the dough. The dough should be hard, not soft. Once the dough is ready, cover it and let it rest for 10 to 15 minutes.

Once the dough is ready, roll it into small balls. Take one ball and roll it out thinly with a rolling pin. Shape it into a small ball, like a papdi. The papdis should neither be too thick nor too thin. Once all the papdis are ready, it’s time to fry them.

Now, using a fork, prick the rolled papdis several small holes. Doing this will keep the papdis flat and crispy during frying, rather than puffing up.

Pour oil into a pan and heat it over medium heat. The oil should not be too hot; it should be moderately hot. Then, place all the papdis in the oil to fry. Turn the papdis over and fry them until golden and crisp on both sides. Once the papdis are fried, remove them from the pan and store them on a plate or sieve to drain off excess oil.

After the papdis have completely cooled, store them in an airtight container. Whenever you feel like it, take them out of the container and eat them. You can make a delicious papdi chaat by adding yogurt, sev, sweet chutney, green chutney, etc. to them.
