Now, add chopped green chilies, chopped coriander leaves, minced ginger, cumin seeds, and all the spices like turmeric powder, green chili powder, and coriander powder to the grated bottle gourd. Mix them all thoroughly.
Add white sesame seeds, salt, and celery seeds to this mixture.
Add yogurt, jowar flour, and gram flour to this mixture and mix well. Add water as needed to make a thick batter. Knead a soft dough.
Once the dough is ready, make small balls of it. Now, make the balls into the theplas. While shaping them, make sure they are neither too thick nor too thin. Keep the theplas sized normally so that they remain soft when cooked.
Now, take a hot pan and place the prepared theplas on it. When it starts to cook slightly on both sides, add a little oil and cook until it turns golden brown on both sides.
Once it turns light brown, your Lauki Millet Thepla is ready. Transfer it to a hot plate and enjoy it with yogurt, pickle, sauce, or green chutney. You can also have tea with it. This is a very easy and delicious snack that once you try it, you will make and eat it again and again.
