First, thoroughly rinse the lentils. Wash them, soak them for a few hours, and set them aside for a couple of hours. After this, drain the water from the lentils and grind them coarsely in a mixer.
Now, to the coarsely ground lentils, add finely chopped onions, chopped green chilies, ginger, coriander leaves, salt, and other spices like red chili powder, turmeric, and coriander powder, and mix well. You can also add gram flour or cornflour to thicken the mixture. Once the mixture is ready, apply some oil to your hands and shape it into small, round balls, like koftas. Place them on a plate.
Now, take a pan, add oil, heat it, and fry the koftas over medium heat until golden brown. Do not fry them on high heat, as they may burn. Therefore, it’s best to cook them slowly over medium heat.
How to Prepare the Spicy Gravy!
To prepare the gravy, add some oil to the pan and fry the cumin seeds until golden brown. Then, add finely chopped onions and fry until golden brown. Add ginger, garlic, and tomatoes, and cook thoroughly. When the oil begins to separate from the spices, add turmeric, coriander powder, red chili, and salt. Prepare a well-seasoned gravy. Add water as needed and cook the gravy for a few minutes. Finally, add garam masala and coriander leaves. Reduce the heat to low and add the prepared koftas to the gravy, letting them cook for two to three minutes. Leaving the koftas in the gravy for too long can cause them to become too soft and break. Cover and let them cook for a while.
