Ingredients for Potato-Onion Curry

For the Curry

  • 1 cup sour yogurt
  • 4 tablespoons gram flour
  • 4 cups water
  • 2 medium-sized potatoes
  • 1 large onion
  • 1/2 teaspoon turmeric
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • Salt to taste

For the Tempering

  • 2 tablespoons mustard oil or regular oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon fenugreek seeds
  • 1 pinch asafoetida
  • 2-3 dried red chilies
  • 8-10 curry leaves
  • 1 teaspoon grated ginger
  • 2-3 finely chopped green chilies

For the Onion Pakodas

  • 1 large onion, thinly sliced
  • 1/2 cup gram flour
  • 1/4 teaspoon celery seeds
  • 1/2 teaspoon red chili powder
  • 1 pinch Turmeric
  • Salt to taste
  • A little water
  • Oil for frying

First, you need to prepare the potatoes for the curry. Peel them and cut them into small pieces. Heat some oil in a pan and fry them until they turn light golden. Once the potatoes are fried, remove them and set them aside in a pan.

Now, you have prepared the onion pakodas to add to the curry. For this, you first need to add gram flour, celery, red chili, turmeric, and salt to the chopped onions and then add a little water to prepare the mixture. Now, turn on the gas stove and place the pan on top. Heat oil in it. Add small pieces of pakodas and fry them on medium flame until golden. Once the pakodas absorb the oil, remove them and place them on a plate.

Now, it’s time to make the curry. For this, you need to prepare the batter. For this, combine yogurt and gram flour in a large bowl and whisk thoroughly. Add turmeric, red chili, coriander powder, salt, and water. Heat oil in a deep pan. Add cumin seeds, mustard seeds, and fenugreek seeds. When the spices begin to crackle, add asafoetida, dried red chilies, curry leaves, ginger, and green chilies, and fry for a few seconds.

Now, add the prepared curry mixture and stir continuously. Cook on the stovetop. Continue cooking slowly.

Now, add the roasted potatoes and cook for a few more minutes. Finally, add the onion pakodas. Do not cook the curry for too long after adding the pakodas, or they may overcook.
