Once you know this method of making Lauki ki Kadhi, you will make it again and again! You can eat this Kadhi with both rice and roti. This is a dish which can be prepared with less oil, less spices and basic home-made masalas. So let’s learn the full recipe for making bottle gourd curry.
What ingredients will you need?
- 500 grams of bottle gourd,
- 1 cup of yogurt,
- 1/2 cup of gram flour,
- 1/2 cup of water as needed,
- 1 teaspoon of turmeric,
- 1/2 teaspoon of salt to taste,
- 1/2 teaspoon of red chili powder, and
- 1/2 teaspoon of coriander leaves.
Method of Preparation
First, to make bottle gourd curry, add one to two teaspoons of oil to the pan to temper the curry. Now as soon as the oil becomes light greasable, add half a teaspoon of cumin seeds, half a teaspoon of mustard seeds, a pinch of asafoetida, two dried red chillies and some curry leaves. This is your tadka recipe, pour it over the bottle gourd curry when it is ready.
Now let’s start with the preparation of bottle gourd curry. For this, first of all you have to wash and peel the bottle gourd thoroughly and then cut it into small pieces. Once you have cut the pieces, boil them. As soon as they become a little soft, take them out.
Now you have to take a big vessel. In it you have to take curd and mix it in it. Now, mix both ingredients thoroughly. After this, add turmeric, salt, and water as needed and mix well.
Now place a pan on the gas stove and heat some oil in it. As soon as the oil is hot, add mustard seeds and cumin seeds. When they start crackling, add asafoetida, dried red chilies, and curry leaves. Once the tempering is ready, add the prepared yogurt and gram flour mixture. Keep stirring continuously. Otherwise, your yogurt may curdle or the gram flour may stick to the bottom. Therefore, keep stirring it continuously.
Now add the bottle gourd that you boiled in it. Mix everything thoroughly and keep stirring it continuously. After adding the bottle gourd, cook the curry for about 5 to 7 minutes more so that the flavor of the curry is well absorbed into the bottle gourd. And mix them together. If you like your curry a little sour, then add some lemon juice to it to make it sour.
Now finally, add finely chopped coriander leaves on top. And your bottle gourd curry is ready. You can serve it with hot rice. Apart from this, it also tastes very good with roti, paratha or jeera rice.
