This is a breakfast recipe that’s both easy to make and delicious to eat. Yes, today we’ll make spongy rava idli and hot sambar. You can make it and eat it every morning.

Making rava idli doesn’t require much effort. You can make it with very few ingredients and basic ingredients. Let’s learn the full recipe.

These are the ingredients you need:

  • Semolina
  • Yogurt
  • Water
  • Eno
  • Salt
  • Finely chopped green chilies
  • Ginger
  • Finely chopped coriander
  • Grated carrots

The complete recipe

First, to make the idli, take about two cups of fine semolina in a large bowl. Add about one cup of yogurt and mix well. Make a thick batter.

Now, cover the batter and let it rest for about 15 to 20 minutes. Once you let it sit for one to two hours, the semolina will swell, and the idli will have a softer and spongier texture. You can also use Eno to make it fluffier.

To make the idli even more flavorful, you can add a little salt, finely chopped green chilies, ginger, and finely chopped coriander. Or, if you prefer other vegetables, you can add finely chopped vegetables of your choice. For example, you can add some grated carrots, finely chopped capsicum, etc.

Now, turn on the gas stove. Heat some oil in a pan. First, add mustard seeds, chana dal, and urad dal and fry them until they turn light golden. Be careful not to burn them. After this, you can add curry leaves and a few cashews. You can also add dried fruits if desired. Add this tempering to the prepared semolina batter and mix well.

Now, apply some oil to the idli molds and fill them with the batter. You can also add ghee or butter if desired. Now, first heat water in a steamer, place the idli molds inside, and steam for about 10 to 15 minutes. Once the idlis are cooked, turn off the heat and let them cool for a few minutes. Then, remove the idlis from the molds with a spoon or knife and place them on a plate.

Now, learn the recipe for hot sambar.

To make sambar, first wash the pigeon pea lentils thoroughly and cook them in a pressure cooker. Thaw the lentils thoroughly. While cooking, add turmeric and a little water to the lentils and cook until soft. Meanwhile, heat some oil in a pan and temper with mustard seeds, cumin seeds, dried red chilies, curry leaves, and asafoetida.

Add finely chopped onions, tomatoes, and your favorite vegetables, such as carrots, bottle gourd, beans, or eggplant. After cooking the remaining vegetables for a while, add sambar masala, turmeric, and salt. Then, add the cooked lentils and water as needed, and let it boil for a while. Mix everything together.

When the sambar is cooked thoroughly and the vegetables are soft, add a little tamarind water at the end. This will add a slight sourness to the sambar and make it taste absolutely amazing. Now your soft rava idlis and hot sambar are ready.
