Full Recipe for Chana Dal Puri

Step 1: To make Chana Dal Puri, start by taking about half a cup of chana dal (split Bengal gram). Soak the lentils in water for approximately four to five hours. Afterward, rinse the soaked lentils thoroughly in clean water. Next, transfer the lentils to a mixer jar. Add half a teaspoon of fennel seeds, a piece of ginger, four cloves of garlic, two green chilies, and some fresh coriander leaves to the jar, and grind everything together well. Add a little water to ensure the mixture remains soft and blends easily.

Step 2: The next step is to transfer the ground lentil mixture into a bowl. Now, add two to three tablespoons of suji (semolina) to the mixture. Now, add all the spices—such as chaat masala, coriander powder, black pepper, turmeric powder, garam masala, ground carom seeds (ajwain), chili flakes, salt, and dried fenugreek leaves (kasuri methi)—and mix everything well.

Step 3: Place a pan on the stove, add 2 tablespoons of oil, and heat it slightly. Once the oil is warm, add a pinch of asafoetida (hing) followed by the prepared lentil mixture. Mix in finely chopped fresh coriander leaves. Next, add wheat flour to the mixture and knead it into a dough. Once the dough is ready, let it rest for about ten minutes.

Step 4: This is the final step. Take a deep frying pan (kadhai) and heat oil in it for frying the puris. Shape the prepared dough into puris. Once shaped, carefully place them into the hot oil and fry until golden. Your puris are now ready; you can enjoy them with green chutney.
