If you’re looking for something delicious, crunchy, and protein-rich for an evening snack, soya kebabs are a great option. They can be prepared with simple ingredients found at home. These kebabs, just like the ones you’d find outside, are a great choice for tea and as a party starter.

- Boiled potatoes
- Gram flour
- Cornflour
- Finely chopped onions
- Ginger-garlic paste
- Green chilies
- Salt
- Red chili powder
- Coriander powder
- Garam masala
- Amchoor powder

How to make soya kebabs
First, put the soya chunks in a pot and pour hot water over them. Let them soak in the water for about 10 to 15 minutes, allowing them to soften thoroughly. Afterward, drain the water and rinse them with clean water.
Now, the most important thing is to remove any excess water. Press the soya chunks firmly between your palms to squeeze out the water. If desired, you can drain the water by placing it in a clean cloth. This will make the kebab mixture more smooth.
Next, put the soya chunks in a mixer jar and grind them coarsely without adding any water. Be careful not to make it into a paste. Transfer the prepared soya mixture to a large bowl.
Now add grated boiled potatoes to the mixture. The potatoes will help bind the mixture. If you prefer to use less potatoes, you can slightly increase the amount of gram flour instead.
Now add finely chopped onions, ginger-garlic paste, and green chilies to the bowl. Then add salt, red chili powder, coriander powder, garam masala, and a little dry mango powder and mix everything thoroughly.
To bind the mixture and give the kebabs a crispy exterior, add 2 to 3 tablespoons of roasted gram flour or cornflour as needed. Now, knead it well to form a mixture that can be easily formed into kebabs.
Apply a little oil to your hands, take a portion of the mixture and shape it into the desired shape. You can make them into round tikkis, long rolls, or small kebabs. If the mixture seems a little soft, refrigerate the kebabs for 10 to 15 minutes. This will help them hold their shape better.
Now heat the oil in a pan. Once the oil is hot, carefully add the kebabs and fry them over medium heat until golden and crispy on both sides. High heat can cause the outer layer to brown too quickly, so it’s best to cook them over medium heat.
Make a quick green chutney to accompany the kebabs.
A spicy green chutney enhances their flavor. For this, add coriander leaves, mint leaves, green chilies, garlic, a little cumin, lemon juice, and salt to a mixer. Add a little water as needed and grind until finely ground.
Your crispy soya kebabs are ready. Serve them with hot green chutney. It is a delicious and easy-to-make option for evening tea, rainy season snack or a small party at home.
