To make Palak Chilla, first, take the spinach leaves and clean them thoroughly.
Then, finely chop the spinach. If you don’t want to chop them, you can grind them coarsely in a mixer with a little water. This will make the chilla even finer.
Once the spinach is ground, take a large bowl and add the gram flour to it. Now, add chopped spinach, or ground spinach, onion, green chilies, ginger, cumin, celery, turmeric, red chili powder, and salt to this gram flour. Mix all the spices thoroughly with the spinach.
After this, add water little by little to prepare a thick batter. Now you need to make the cheela on a pan.
Now, take a non-stick pan or iron griddle and heat it. Once the pan is hot, pour a few drops of oil on it and spread it lightly. Once the oil is hot, pour the batter into the center of the pan, oil it thoroughly, and spread it thinly in a circular shape.
Drizzle a little oil on the edges of the cheela and cook it on medium heat. Cook until golden and slightly crispy on both sides. Once cooked thoroughly on both sides, remove the cheela to a plate.
Now it’s time to serve. Transfer the prepared spinach cheela to a plate and serve it hot with green coriander-mint chutney, yogurt, or tomato sauce. A drizzle of lemon juice enhances its flavor. You can also serve it with a salad.
Tips for Making the Cheela Crispy
- If you like your spinach cheela extra crispy, keep the batter thin and avoid making it too thick.
- Cook the cheela thoroughly over medium heat. Flipping it too quickly can cause it to break, so cook only until the bottom is golden brown.
