- 1 cup samak rice (barnyard millet), washed and soaked for 20 minutes
- 1 medium potato, peeled and cubed
- 1 green chili, chopped (optional)
- 1 tbsp ghee or sendha-friendly oil
- 1 tsp cumin seeds
- A few curry leaves (optional)
- Rock salt (sendha namak), to taste
- Fresh coriander leaves, chopped
- 2 cups water
Instructions:
Fluff with a fork and garnish with fresh coriander.
Heat ghee in a pan. Add cumin seeds and let them crackle.
Add green chili and curry leaves (if using), then sauté the potatoes until slightly golden.
Drain and add the soaked samak rice. Stir well.
Add rock salt and pour in 2 cups of water.
Cover and cook on low flame for about 10–12 minutes, or until the rice is soft and water is absorbed.
