To make this, first boil the potatoes and once they’re done, cut them into small pieces. Keep in mind that when you boil potatoes, don’t boil them completely soft; instead, steam them only once or twice. Once you’ve cut the potatoes into small pieces, add finely chopped cauliflower and then green peas. Now steam them all thoroughly in hot water until everything softens slightly, and add salt as desired. Once the vegetables are soft, transfer them to a bowl and mash them thoroughly.

Now, take a large pan and add oil or 1 tablespoon of butter. Heat it and add cumin seeds. Once they start to crackle, add finely chopped onions and fry them until golden brown. Then add ginger-garlic paste and green chilies and cook thoroughly.

Now, add finely chopped tomatoes and bell peppers to the pan and cook them until the tomatoes are completely soft. After this, add all the basic spices like coriander, turmeric, red chili powder, pav bhaji masala, and salt to taste and mix well. Once all the spices are mixed, fry it for a few minutes. After frying, add the mashed vegetables, mix everything well, and let it cook. If necessary, add some hot water and keep stirring and pressing the bhaji with a masher.

Let it cook for about ten minutes, stirring occasionally to get a good texture and prevent it from becoming runny. Finally, pour the remaining butter on top, sprinkle some chopped coriander leaves and lemon juice, and transfer it to a serving plate.

Now, you want to eat it with pav. To prepare the pav, heat a pan, spread butter on it, cut the pav in half, place it on the pan and bake it until it becomes slightly golden and crisp on both sides. Now, eat it with hot bhaji. You can eat it with green chutney and onion along with vegetable.
