Recipe
The holy month of Sawan is considered one of the most auspicious periods in the Hindu calendar. Devotees of Lord Shiva observe fasts (vrat) during this time, especially on Mondays, known as Sawan Somvar. During these fasts, people follow a sattvik diet and avoid grains, onions, garlic, and common table salt. One of the most popular and comforting dishes made during Sawan fasting is Vrat Wale Aloo, a simple yet flavorful potato curry that perfectly fits the fasting food guidelines.
Here’s an easy and delicious recipe to prepare Vrat Wale Aloo at home.

Ingredients:
- 4 medium-sized potatoes (boiled and peeled)
- 2 tablespoons ghee or fasting-approved oil (like peanut oil)
- 2 green chilies (slit or chopped)
- 1 teaspoon cumin seeds (jeera)
- 1 teaspoon grated ginger
- Sendha namak (rock salt) to taste
- 1 teaspoon black pepper powder
- 1 teaspoon crushed coriander seeds (optional)
- 2 cups water (adjust as per desired consistency)
- Fresh coriander leaves for garnish
Instructions:

- Prepare the Potatoes:
Boil the potatoes until soft but not mushy. Peel them and break them into medium-sized chunks with your hands. This gives a rustic texture to the curry. - Temper the Spices:
Heat ghee or oil in a kadhai or deep pan. Add cumin seeds and let them splutter. Then add grated ginger and green chilies. Sauté for a few seconds until aromatic. - Add Potatoes:
Add the broken potato pieces to the pan. Stir well so the potatoes are coated with the ginger and cumin flavors. - Season and Cook:
Add sendha namak, black pepper powder, and crushed coriander seeds. Mix well. Pour in about 2 cups of water and bring the curry to a gentle boil. - Simmer:
Let the curry simmer for 5–7 minutes. You can mash a few potato pieces with the back of the spoon to thicken the gravy slightly. Adjust the water if you prefer a thinner consistency. - Finish and Serve:
Garnish with chopped fresh coriander leaves. Serve hot with vrat ke parathe, kuttu ki puri, or samak rice.
Tips for Best Taste:
- You can add a little lemon juice for a tangy twist.
- Roasted peanuts can be added for extra crunch and flavor.
- Always use rock salt (sendha namak) instead of regular salt during fasting.
