Besan curry is often made when there are fewer vegetables in the house or when one craves something light, tangy, or tasty.
This curry is mostly made in homes in Uttar Pradesh and Rajasthan, but now you can make it in any home with this recipe. Besan curry is cooked by lightly roasting the gram flour, and then it’s prepared with yogurt or water, along with tempering and spices, to create a delicious gravy.
Sometimes, fritters (pakoras) are added to the curry, which enhances its taste. Besan curry is not only tasty but also quite healthy because gram flour is high in protein. Additionally, it is rich in iron and fiber, which is very good for our digestive system. For vegetarians, it’s considered a high-protein dish.

Method
Start by using half a cup of besan (gram flour). Add one cup of yogurt. If the yogurt is sour, it will enhance the flavor. Add 3 to 4 cups of water, depending on how thick or thin you want your gravy.
Add 2 spoons of oil, half a small teaspoon of turmeric powder, one small teaspoon of red chili powder, and one small teaspoon of coriander powder.
Add salt to taste. Finally, add finely chopped fresh coriander leaves.
Cook it with tempering (tadka) to complete the recipe.
