Complete Method of Preparation

To make Chole Kulche, first, you need to boil the potatoes and chickpeas thoroughly with a little salt. Once the chickpeas and potatoes are boiled, set them aside and drain the water.
Now, put the potatoes and chickpeas in a large bowl. Cut the boiled potatoes into small pieces and add them to the boiled chickpeas. After this, add all the chopped vegetables like onion, tomato, and cabbage (optional).
After mixing all the vegetables, add all the spices like salt, turmeric, chili powder, and chaat masala and mix well. Next, to make tamarind pulp, soak the tamarind in water for one to two hours. Then, remove the tamarind from the water and blend it in a grinder with water and lemon juice.
After this, add the tamarind pulp and, if desired, you can also add lemon juice and mix well. Mix all the chickpeas well with the spices and pulp, transfer them to a plate, and serve garnished with chopped coriander leaves.
