Ingredients for Dry Aloo Masala
- 4 medium-sized potatoes (peeled and cut into cubes)
- 1 medium onion (finely chopped)
- 2 tomatoes (pureed or finely chopped)
- 1-2 green chilies (slit or chopped, adjust to your spice preference)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tablespoons oil (vegetable or mustard oil)
- Water as required
Cooking Method
Prepare the Potatoes
Start by washing the potatoes thoroughly. After that, peel and cut them into small cubes. For a crispy texture, fry the potatoes in oil until they turn golden brown.
Fry the Potatoes
Once the potatoes are fried to a crisp and golden color, set them aside.
Prepare the Base
Heat 2 tablespoons of oil in a pan. Add mustard seeds and cumin seeds to the hot oil. Let them splutter for a few seconds.
Saute Onions
Now, chop the onion finely and add it to the pan. Sauté the onions until they turn golden brown.
Add Ginger-Garlic Paste and Green Chilies
Once the onions are browned, add the ginger-garlic paste and slit green chilies to the pan. Cook them for about 1-2 minutes.
Add Tomatoes
Next, add the pureed or finely chopped tomatoes. Let them cook for 5-7 minutes until they soften and blend into the mixture.
Add Spices and Potatoes
Once the tomatoes are cooked, add all the spices: turmeric powder, red chili powder, garam masala powder, and coriander powder. Mix the spices well with the potatoes.
Cook with Water
Add about 1/2 cup of water to the pan and cook the mixture thoroughly. Keep checking the consistency while cooking.
Once the dry aloo masala is cooked, garnish with fresh coriander leaves and a sprinkle of garam masala on top. Mix everything together.
