What is Veg Chap?

Veg chap, also called soy chap or vegetarian chap, is made from soya chunks or granules that are ground and mixed with wheat flour, spices, and sometimes lentils to form a dough. It’s then steamed or shallow-fried and simmered in a spicy, tangy gravy. The end result is a chewy, succulent texture that mimics meat, making it a favorite even among non-vegetarians.

Ingredients

For the chap:

  • 1 cup chana dal (split Bengal gram)
  • 1 cup grated paneer or mashed boiled potatoes
  • 1/2 cup grated carrots
  • 1/2 cup finely chopped beans
  • 1 tsp ginger-garlic paste
  • 1 green chili (finely chopped)
  • 1 tsp garam masala
  • Salt to taste
  • Breadcrumbs for binding
  • Oil for shallow frying

For the gravy:

  • 2 medium onions (finely chopped)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp kasuri methi
  • Fresh coriander for garnish

  1. Preparing the Chap Patties:
    Soak chana dal for at least 2 hours. Boil it until soft but not mushy. Drain excess water and mash lightly.
    In a bowl, mix the mashed dal, grated vegetables, paneer/potatoes, green chili, ginger-garlic paste, garam masala, and salt.
    Add breadcrumbs gradually to get a firm dough-like consistency. Shape into oval or round patties.
    Heat oil in a pan and shallow-fry the patties until golden brown on both sides. Set aside.
  2. Making the Gravy:
    Heat 2 tbsp oil in a pan. Add chopped onions and sauté until golden brown.
    Add ginger-garlic paste and cook till the raw smell disappears.
    Mix in the tomato puree and all the powdered spices. Cook the masala until oil separates.
    Crush kasuri methi between your palms and add for extra flavor.
    Add a splash of water to adjust consistency and simmer.
  3. Bringing It Together:
    Gently place the chap patties into the gravy and simmer for 5–7 minutes so they soak in the flavors.
    Garnish with coriander leaves.
